It’s here! It’s Saturday, woot woot! It’s nice to have the weekend to recoup (or a few days off during the week) – we get so much done on weekends. We tend to stay busy. We are taking Charlie in to the vet today for bloodwork before he has his teeth cleaned later in the month.
I try to have an idea of what I’m making for dinner for at least most of the week. Then I make my grocery list (stops at the seafood market for shrimp, usually Trader Joe’s, Whole Foods, Harris Teeter and occasionally Publix (only place I can find the buttery-textured GOYA Chickpeas!) – It takes some planning, but it’s worth it. I am very good at only buying what’s on my grocery list (to a fault). I look up the recipe, jot down the ingredients that I need and which stores they’re at. Sometimes I’m a little overzealous. Too many wonderful recipes with fresh ingredients and it doesn’t always end up working out.
Sadly, EarthFare, near us, is closing its doors soon. It was so convenient to walk to the store to pick up things I need for dinner. Hope another grocery store arrives soon! I wish them well…
I’m thinking this week that I will make:
- Italian Wedding Soup, with a side chopped salad
- Mediterranean Chopped Salad
- Pork Chop and Roasted Veg (potato, sweet potato, onion, turnip, carrot) (see roasted veg portion of the Roasted Veg, Quinoa, Cranberry, Walnut, Bleu Cheese recipe)
- and maybe some fish tacos… 🙂

Last night I made egg rolls (in the air fryer) for the first time ever- they were yummy and EASY and no doubt healthier than if I had fried them. One more vegan option to add to my recipe stack..
Macaroni And cheese with left over meat loaf, today just finish pasta with shrimp, red pepper, onion, celery and 🍅 + Parmesan cheese, yum
