Wow! This is so much better than it sounds, trust me! We used to get a tuna melt at a restaurant (they stopped carrying it) – it came with slaw that had a sesame taste to it… it was delicious, and it was HUGE, we would usually split it along with a salad. We have been eating at home since early March because of Covid19. We did pick up some carryout for my birthday last week and it was fabulous. I’m trying to think of things to make that are different – I can get stuck in a rut recipe-wise. THIS IS AMAZING!

When I make a grocery list I start with a menu, then go back and jot down everything we need for each recipe. When I get to the store it’s quick and easy – my list is divided into Dairy, Produce, Freezer and regular aisles. Most of our groceries are from the perimeter – the healthiest places to shop.
I mentioned to Fred, how about a Tuna Quesadilla – his response – eyeeeeewwww, I don’t think so. Hmmm. We used to get it at the Mustard Seed restaurant – OH YEAH! So we made it and let me tell you it’s divine!
TUNA MELT QUESADILLAS
This “recipe” uses one can of tuna, two tortillas (I used flour) and it serves two.
Whip up tuna salad – I use a can of (Costco Albacore) tuna, drained and rinsed, a spoonful of mayo, pepper, diced celery and or red onion. Mix it up good.
Grate some Pepper Jack cheese (or whatever cheese you like).
Heat a few tortillas (we used flour) – we put directly on a gas burner, but you can heat in a pan, keep flipping, do it until they’re hot.
Place tortilla on a plate, spread 1/2 the tuna on 1/2 of the tortilla, sprinkle with cheese and then fold in half (I know you can heat it and then fold, but you can’t do two at once when you do it that way). Repeat with second tortilla.
Using a non-stick skillet, put just a tiny bit of olive oil in the pan (I used a paper towel and spread it around a bit, you don’t need much!) then place the two folded tortillas in the hot pan. Let it sit, but keep checking it, once brown, flip it. Once that side is brown remove it from the pan and cut into wedges.
WOW, right?? This is something you will become hooked on, trust me! I served it with Coleslaw and it’s the perfect compliment! I have a few coleslaw recipe, one is the more traditional coleslaw, made with mayo (can sub some Greek yogurt!) and the other is made with olive oil/red wine vinegar – this is the healthier option and oh, so good!
