What a great find! You are correct about kitchen. I would make the screen porch a working pantry and open the kitchen up like you suggested. Add a new screen porch to the side. A open vaulted ceiling would be awesome:)
My take on this plan (via cut & paste) is to take the sun room and make a den/office/spare bedroom with full bath on the north and leave the screened porch be.
I like your version as well! We have a sunroom and it’s one of our favorite rooms, it’s like sitting outside, it’s peaceful, so I would probably keep the sunroom (for us), but it’s great to be able to modify a plan to work the way you would use it. I love the architects who will do modifications. This is a great plan by Moser Design Group!
