
Oh, this salad is so good – It’s topped with my marinated cilantro lime – grilled chicken. The flavor permeates every bit of the chicken resulting in nice flavor with every single bite. We grill extra and have it the next day or so. It’s good all by itself, thrown into a brown rice/black bean/guacamole/salsa bowl or as above…
Find the grilled chicken marinade recipe HERE! The leftover grilled chicken atop a salad is a favorite. Especially when it’s so hot outside. I like to assemble the salad so it’s nice and cooooold! You can toss what you’ve got into it, some favorites: radishes, green onion, cucumber, carrots, and thin cheddar cheese pieces. Sometimes I make a vinaigrette (olive oil, dijon, white wine vinegar, honey) and sometimes I use bleu cheese which is so tasty with this combination. The key is to find crunchy lettuce. I found a brand I was in LOVE with and I don’t see it in the store now, ahhhh…. so I’m keeping my eyes peeled. #whereareyou #littleleaffarms
