PiCkLeD rEd OnIoNs – YuM!

Have you ever had picked red onions? If your answer is no, you’re missing out! I am seriously in love with them, they’re so tasty on everything you top them with, salads, sandwiches, cucumbers, hamburgers, and so much more! They’re quick and easy to make – Keep them in the fridge and you’ll elevate a ho hum dish in seconds!

Bonus: they couldn’t be easier (or quicker) to make. I don’t use salt in mine, and I don’t miss it one bit. I don’t use sugar, but I do use a few drops of honey sometimes. 

PICKLED RED ONIONS

  • 1 red onion, peeled and sliced THIN
  • White Vinegar (about 1/2 cup for 1 red onion)
  • Honey (optional) (I use a few drops)

DIRECTIONS:

In a jar, add white vinegar in an amount that you think will cover the onions once added. Sometimes I add a few drops of honey, sometimes I don’t. If you use honey, stir it in, then add the thinly sliced red onion to the jar. Give the onions a stir, then cover and place in the refrigerator. They can be ready fairly quickly if sliced thinly. They’ll turn a pinker color and soften. You will be thrilled!

Note: you can slice thicker if you like – it’ll just take a little longer to soften.

You can eat them right out of the jar – they are exquisite. Recently, these are a few ways I have had them: On a corn tortilla with one scrambled egg + cheddar, on a goat cheese, peach, chicken salad (omg!), on an open faced tuna melt 😋 (underneath the cheese and in the broiler just until cheddar melts), in a pita with a slice of cheese, melted quickly then slid in some PRO. They taste good with everything! From what I’ve read, they last about 3 weeks in the refrigerator. Ours doesn’t last long, then I add more red onion to the mix and top with more vinegar/honey (if using). I’ll do that a few times and then start fresh.
