
We had an extremely hot and humid summer here in Charleston, SC this year (as did much of the country). So after Tropical Storm Lee blew through the area we were left with nicer temps and less humidity. After avoiding the stove/oven for months on end, we’re putting it to good use while we can. Time for this (quick) Green Chicken Chili. It will quickly become a favorite. One night we have baked chicken (and bake extra) and then in the next day or so we make the Green Chicken Chili. Tasty!
Once you have all of your ingredients out and prepped this recipe comes together very quickly. It doesn’t simmer for hours, but the taste – – out of this world! Especially with the crunchy toppings which may seem unusual, but give them a try, I almost didn’t but am so glad I did! The original link to this recipe doesn’t appear? 📒 GREEN CHICKEN CHILI RECIPE – Cooking Light
Ingredients
- 4 cups low sodium chicken stock/broth
- 2 – 15oz.cans Northern Beans, drained and rinsed
- 2 tablespoons olive oil
- 1 cup yellow onion, chopped
- 1/2 teaspoon unbleached flour
- 1 tablespoon Cumin
- 2 – 4oz. mild chopped green chilies, drained
- S&P
- 2 tablespoons lime (fresh squeezed)
Toppings:
-thin sliced radishes -sour cream -avocado, thin sliced -tortilla chips
Directions:
In a bowl: 1/2 cup chicken stock + 1/2 can beans. Mash with potato masher.
Dutch Oven: Heat olive oil on stove on Medium High. Add onion, until it starts to soften – then add garlic for about 30 seconds. Continue to stir.
Sprinkle the pan with flour, cook about 1 minute.
Add ‘bean mixture’, remaining stock, remaining beans, S&P and bring to a boil.
Once it starts to boil, immediately turn it down to Medium and cover. Simmer about 5 minutes until slightly thick.
Add shredded chicken, cook 2 minutes.
Stir in lime juice.
Dish into bowls and serve with toppings (sliced radishes, sliced avocado, sour cream, cilantro, and tortilla chips). I think you will fall in love with this as much as we have!
