Turkeyed Out? Make this for dinner!

Who among us has been fortunate enough to have their fill of turkey over the past few days? Are you looking for something lighter, healthier but still soooo tasty? This recipe is out of this world good. It’s from a healthy magazine (don’t let that scare you – it’s divine!), and is a recipe I’ve made. Link below along with a few changes I made. Thanksgiving dinner was out of this world, but I need lighter in the biggest way.

My review on EatingWell.com: This recipe was over the top fabulous! I only had butter peas on hand, so I used those – I just covered the pan for a bit with a little of the pasta water (prior to adding pasta) until they were tender, and then I continued on with the recipe. Absolutely fabulous! My substitutes: 12 oz butter peas, thawed, 1 onion vs. shallot, no rosemary and a mix of pecorino and parmesan. The fresh pasta puts it over the top.
