The other day, I thought to myself, hmmm… peanuts, chocolate – what does it take to make chocolate covered peanuts? Well, I searched. I found. I made and I am delighted. These were so quick to make, yet taste like something you would buy from a really good chocolatier! Of course your choice of chocolate is important. Quick, easy and a nice (and special) treat for Valentine’s. #youhavetimetopractice
I didn’t want to make a full recipe because I wanted to be sure I really liked them first. Next time I would make them a wee bit smaller (they aren’t large), more small bite size. We have a dog and as you know dogs + dark chocolate is a bad (very bad) thing.
I saw these Chocolate Peanut Clusters on iambaker.net – I gave them a try and I’m so glad I did! Head on over to the link above to print the recipe and read more details. This is my sticky note version (how I made them):
📒 Chocolate Peanut Clusters
Prepare baking sheet with a sheet of parchment. Make sure that the baking sheet will fit in your fridge (this does not go into the oven)!
- 4oz. semi-sweet chocolate chips (Guittard brand)
- 3/4 cup roasted and salted peanuts
Note, my peanuts were large (Costco), so I gave them a rough chop, leaving most in half pieces, but the clusters would have been huge otherwise.
I put the chocolate chips in a large glass bowl in the microwave 15 seconds at a time and a quick stir after each *ding*. My microwave took about 2 minutes. Still check and stir every 15 seconds. Once melted set the warm chocolate aside for about 3 minutes, allowing it to cool slightly. Then add the peanuts and using a spatula, stir to coat all the peanuts.
Now spoon onto the prepared baking sheet (on the parchment). Then place in refrigerator 20 minutes + before eating. Now they should be good to place in a storage container and in the fridge. I am shocked how easy it is!
Remember, the better the chocolate, the better the cluster! I can’t wait to try this with other nuts!
Enjoy!
🍫Until next time…

These were so good!

Peanut Butter Clusters are one of our very favorite treats for our Christmas give away cookie/candy assortment (about 25 treats in each box) to friends and neighbors every year. The clusters are mentioned as one of those that are looked forward to receiving.
Now we would like to do something similar (smaller – 12 treats) for Valentine Day. We would like to form the clusters in heart shapes but can’t find a good way to do that. Loading a cookie cutter would work but not efficiently. It would take a long time to make just a few. Does anyone have an answer for making them quickly, using the chocolate/peanut recipe?

What a thoughtful gift (and great idea!) – I love the thought of heart shaped clusters, hmmm. Will have to ponder that and possibly make a batch in the upcoming weeks and give it a whirl? I wonder if it’s possible to make an indentation/shape it with a silicon spatula while they’re on parchment paper? Perhaps that would allow a bit of movement to shape and then pop the tray into the fridge to help set quickly? A thought. Let me know if you hear of something better. Good luck!!
