This recipe IS a winner! #vegpasta

After spending a considerable amount of time and money on a recipe that wasn’t great – actually neither of us even liked it despite loving all the ingredients.. we opted for something healthy, tasty but without a lot of ingredients (or work!) This is an old favorite. We have always eaten it as a meatless meal (we like to have several every week), but there wasn’t a lot of pasta so we opted for a…

…grilled chicken breast (olive oil, salt, pepper) to go alongside. Served with a small salad this is perfection. Nice and clean, nothing weird AND you’re getting your veggies in! I usually use penne, but this time I had Trader Joe’s little bowtie pasta and I know my husband loves that one, so I used it. I didn’t have the full amount for the recipe (plus I have to save some for the dog as a treat, so…) which is why we’re short on pasta for another meal.

I made a recipe the other day, I was so excited about it. Great ingredients: Italian sausage, kale, onion, leftover sourdough bread (freshly baked and then toasted in the oven), eggs, etc. I pulled it out of the oven, it was beautiful – it smelled good, it tasted good and then it didn’t. My husband and I both looked at each other and whoa, it was a no go. I think there was too much of an ingredient that turned the entire thing bad. Ugh. After that we both want something plain. So I made a favorite pasta for days when we want a meatless meal. It’s PENNE WITH SPINACH, FETA and OLIVES – ohmygoodness, it was divine! We have some leftover, but not a lot, so we took a few boneless/skinless chicken breasts out of the freezer and will toss those on the grill (olive oil/salt/pepper) and have a side of pasta with a small 🥗 and dinner will be served!

So, if you’re looking for an excellent pasta dish that’s super easy (and tasty!!) give it a whirl, the only thing you cook is the pasta! #nolie
