Avocado, Tomato & Cheddar Open Face Toasted Sandwich!

This toasted (under the broiler) sandwich is quick to throw together with just a few ingredients. It’s also fabulous tasting. I used healthy (store bought) bread, had a ripe avocado (do you know the trick for keeping them good for a long time?) – Give this a try, I think you’ll love it!

As I mentioned this is quick, so preheat your oven – I use the broiler (or Convection Broil when I remember it’s there). As the oven is heating I get the ingredients ready…

Avocado, Tomato & Cheddar Open Face Toasted Sandwich

  • Dave’s Killer Bread, or any sliced bread that will do good in the oven, I (very) lightly toasted mine
  • Extra Sharp Cheddar, grated lightly (makes it finer)
  • Avocado, peeled, pitted and sliced
  • Tomato, sliced to top sandwiches with
  • Dijon (or Lusty Monk mustard, what I used)

Lightly toast the bread (I toast very lightly in the toaster, as it will toast more in the oven). Each time I make this I assemble a little differently, do it however you like. Add a smear of dijon or Lusty Monk mustard (if using), add the avocado and tomato slices on top of the mustard. Top with the shredded cheddar. Pop into oven under broiler (be sure not to get too close to the broiler element – mine is on the top of my oven), I use 2nd rack from the top. Keep an eye on it, usually it only takes a few minutes. Once the cheese is melted and started to look bubbly, pull it out!

This is great served with a small garden salad, or even a handful of grapes. It’s delicious. I originally had it at a restaurant about twenty years ago, they used a cheddar/jalapeño bread. Wow, that was special! I hope you enjoy!

🔥HOT TIP to keep your avocados good for longer. Once they get ripe and are ready to eat. WRAP IN FOIL and put in the refrigerator (I put them in my produce drawer). I’ve used them two weeks after they were first ripe and they were perfect! #gamechanger!

  1. I’d love to give it a go, but she’s an outstanding cook, has an instinct for what goes good with what. I can cook a potato in aluminum foil, make spaghetti and mac/cheese and hot dogs. Beyond that, it’s very iffy 😎😂
