My husband and I were out running errands one day, it was a bit past lunchtime and when we got home we wanted something quick, tasty and relatively healthy. I whipped this up in a matter of minutes and we were sitting down to a fabulous lunch in just minutes! Feel free to customize this using what you like…
Black Bean Wrap with Rice, Pico, Cheese, Lettuce and Avocado
Short version:
Heated black beans with jalapeno, on a warm wrap, with shredded cheese, pico (tomato, red onion, lime), avocado and lettuce – shown deconstructed… otherwise it’s nice and tidy and you can’t see the ingredients ;)
Ingredients/Directions
- 1 can of black beans + jalapeño
- brown rice (I used leftover that I had in the fridge or you could heat a pouch of frozen in the microwave)
- pico (or to make: 1-2 plum tomatoes, red onion (soaked for 10 min. in cold water before dicing)
- shredded cheese (pepper jack! cheddar also works well)!
- crunchy lettuce (optional, I happened to have it and it was a DELIGHT!)
- avocado (not pictured – totally forgot it)!
Heat 2 tortillas in the microwave between damp paper towels just until hot.
Heat black beans, add a few spoonfuls of jalapeño, once it boils you can turn it off and put the lid on (or turn it to low) while you finish prepping.
Grate some cheese (so much better than pre-grated!)
Take a heated tortilla spread black beans, top with rice and cheese, pico, avocado and lettuce. Don’t fill to the edges because you still need to fold it. I fold mine at the bottom and then roll and it stays nice and tidy unless I overfill… 😉
Fresh and delicious! Filling too. This is one of our go-to meals – this or a bowl (no tortilla), equally as good!
