Lunch is served!

Ahhh, salad. The ubiquitous term for all things healthy thrown together in one bowl, topped with whatever catches our eye (or our tastebuds), drizzled with a bit of dressing and devoured. It’s like sitting down to eat a big bowl of health.

I like to make my salad in the morning so that it’s nice and cold by the time lunch rolls around. It’s nice to eat and have everything already cleaned up! I prefer the taste of Organic Girl Romaine Lettuce in the bag that you have to wash. I find when I buy romaine lettuce in a bag, ready to eat, there is so much of the stem (?) of each piece of lettuce. Luckily those are Charlie’s favorites. I’ve never seen a dog get so excited about lettuce. He catches it mid air. By the time I make my salad, he’s eaten the equivalent of a salad of his very own.

On this day (above), I chose to use what I had, which were radishes (that tasted fabulous), carrots, tomato, cucumber, a boiled egg and the romaine lettuce. I topped it with a small amount of bleu cheese dressing – an indulgence that took it over the top. It lasted me easily until dinner.

Hmmm, I think I’ll go boil a few eggs for the upcoming days…
