
A Spring Wrap!
Now that the weather is warming up (quickly) it’s time to switch to lighter fare. Something fresh and different, but tasty nonetheless. Let me tell you, this is a winner. It was quick to throw together, part of it is grilled (outside if you can), the rest comes together easily AND you can add whatever you love!
I marinated a few small boneless skinless chicken breasts in a little olive oil, garlic and pepper. Put them in a zip-top bag and put them in the fridge for about an hour.
While Fred was grilling (bless the Grillmaster!) I sliced some tomatoes, shredded some Cabot pepper jack cheese, and pulled out my organic baby lettuce. Once the chicken was done I cut it in pieces with scissors and heated a few tortillas (whatever kind you like) over an open gas flame.
Then I sprinkled the cheese, added the chicken, tomatoes and corn. That was it. Nothing else.
I cannot tell you how delicious this was. The fresh corn cut off the cob made it extra special! The possibilities are endless. We finished by splitting a sumo orange while we still have them (they’re almost out of season, boohoo!).
