
Sometimes we all get weary from trying to think up what to make for dinner. Something different, something fun – something quick! Well, this hits all those marks and then some and with a special ingredient it goes #overthetop These are so easy to prepare, if you have the toppings prepped you’ll be eating in no time! #winwin #ahealthysplurge
Every once in a while we’ll splurge on turkey tacos, they’re out of this world! My husband loves tacos, and would love them even more often. I always made beef tacos. A friend told me she had made turkey tacos for dinner – well then! Let me give it a whirl… I did and it was a hit! Didn’t miss the beef at all. I opted to buy ground turkey breast meat because the toppings you add can add additional moisture so they definitely won’t be dry, but any ground turkey or ground chicken will work.
I just bought a packet of seasoning (organic) and some shells. We splurged on hard shells this time, sometimes we use corn or flour tortillas. They’re good, but not as “fun”.
Follow the directions on the packet, the one we had called for 2/3 cup warm water (I don’t use warm water, I use cool water). Brown the turkey, then add the packet and the water and cook for a few minutes, then I have a trick I learned long ago. Before heating the shells in the oven, fill them with the meat mixture. Then pop them in the oven for a few minutes and *poof*, dinner is ready! I read long ago that if you fill the shells before heating there is less breakage and it turns out to be true! They even heat well the next day for leftovers!
Toppings: this is serious business. Use what you love. I usually use tomato, shredded iceberg lettuce, avocado (with a little extra scooped on the plate for dipping), shredded cheddar (shred it yourself, pre-shredded cheese has additives that take away the flavor and change the texture), sometimes we use pickled red onions, a spoon of sour cream on the plate for dipping (you use less that way) and the special sauce. It’s top secret, so keep it hush-hush… I didn’t buy a taco kit, but really wanted some taco sauce – checked the ingredients on this one by Sky Valley and it looked A. The sauce added a nice touch that took these tacos over the top. Looking forward to having them again soon!
