
This is a fabulous, no-bake dessert that comes together in no time and will taste like it was a lot more work than it actually is! One bowl, a hand mixer, a measuring cup and a spatula and you’re good to go! This is divine – if you take it somewhere, bring a copy of the recipe because people WILL ask!
Once in a great while I’ll make a quick (NO BAKE!) lemon cheesecake – it’s a treat. This recipe comes together in about 5 minutes. This is a vintage recipe from way back in the old days. You’ll see why it comes together quickly – usually I make from scratch desserts, but on occasion I throw caution to the wind – and make an exquisite treat in no time. My husband actually whipped this together for us!
LEMON ICEBOX CHEESECAKE
- 1 Graham cracker crust
- 1 package Jello Instant LEMON pudding
- 1 regular size package Philadelphia Cream Cheese, softened (I used low fat)
- 2 cups milk (I used 2%)
Using a hand or stand mixer – add the lemon pudding mix, cream cheese and 1/2 cup of the milk. Beat until combined. Now, to be sure it’s combined take your spatula and give it a stir – you want the cream cheese mixed into the pudding mixture. Now add the remaining 1 1/2 cups milk and beat for 1 minute.
Pour into graham cracker crust (I used store bought) and refrigerate for a few hours until set.
I served with a twist of lemon or you can crunch a piece of a graham cracker over the top, we don’t have them so I skipped that.
