The Luxury of Avocado Toast!

Avocado toast can have such an exquisite taste and luxurious feel on the palate. Done right it can be silky, creamy and heavenly. Avocados are a healthy fat (which keeps you full longer) and are just plain delicious! I have a hint on how to keep your ripe avocados staying fresh for longer… #gamechanger

Avocado toast is quick to whip together. I pull a few slices of my homemade sourdough out of the freezer (that I’ve already sliced into 1/2 pieces, otherwise it doesn’t fit in the toaster). I can pop them straight into the toaster (turned down lower), once it pops they’re defrosted and (very) lightly toasted, I push them down for a short time until they’re toasted to how we like them.

But, first… I have the avocado ready to go. Sliced or mashed is a debate. Fred likes them sliced but as you bite they have a tendency to fly right off the toast, if you mash that doesn’t happen. So I mash an avocado, spread on the toasted bread, top with sliced tomato if you have it (optional), then squeeze a *little* lemon juice (small wedge for both pieces), a sprinkle of S & P or Za’atar seasoning (I use this brand) is divine (oh la la!), along with a tiny drizzle of EVOO.

🥑 HOW TO SELECT A GOOD AVOCADO: I go by feel – it should “give” a wee bit, but not be too soft. It should give a little without feeling too soft/squishy or leaving an indentation. There was a trick I used (pop the little stem off at the end, if it’s green underneath it’s ripe, if it’s brown, it’s past its prime) – but I read recently that if you do that trick you’re then letting air into the fruit, causing it to ripen faster. If you’re going to use it the same day, that’s fine, but if you bought it to use in a few days… maybe not.

If you want an avocado to use in a few days select a little firmer one. I read that the bumpier the texture the more ripe it is. I’ll often buy one to use the same day, another that is a bit softer than the others, and a few that are firmer.

🥑 HINT TO KEEP FRESH LONGER: Once the avocado is ripe and ready for use, you can prolong its life (I read by two weeks – I haven’t tried that but I have gone almost a week and it was utter perfection!) – simply wrap the avocado in foil and store in the refrigerator! #greattip
