Fresh Food Never Tasted So Good!

I always feel hurried when I’m taking photos of my breakfast/lunch/dinner to share with y’all. Mostly, because Fred is sitting at the dining room table ready to eat. So forgive the thrown together plate – this was fabulous. Fresh food after several days of leftovers, thanks to Tropical Storm Debby. Not complaining, the leftovers were good, but we were really looking forward to something fresh!

RICE: This is the brown rice bowl that we make at times. No chicken this time, just heated brown rice (freezer section/Trader Joe’s).

BLACK BEANS: Heated some black beans: in a small saucepan, I add the black beans + juice + several tablespoons of (jarred) chopped jalapeños, cook on low, add any seasonings you like, cajun, etc.

PICO: tomato diced, lime juice to taste, red onion minced, wee bit of salt (optional)

Sliced avocado (or guac), shredded Pepper Jack cheese, fresh lettuce and a few tortilla chips to break up on top.

Scoop warm rice into pasta type blow, top with black beans, grated cheese, pico, avocado and serve with a few tortilla chips broken on top and a squeeze of lime (optional). Top with fresh lettuce if you have it!

WOW, is that ever delicious!
