New Year, new YOU! Isn’t that what they say when we’re all trying to start the new year off right? Cooking healthier meals is always a big help, and this recipe is so good. It’s originally from Whole Foods from many years ago. The recipe made enough for a football team. Below is my version of the recipe. Paired down and a few changes made. The taste is out of this world and great for leftovers, here it is…
Shrimp Jambalaya with Sausage, Okra and Brown Rice!
- Olive oil, divided (about 1-1 1/2Tablespoons)
- 1 (12-ounce) package pre-cooked spicy Italian chicken sausage, sliced diagonally
- Remaining olive oil
- 1 celery stalk, chopped
- 1 medium onion, diced
- 3 garlic cloves, chopped
- 1 – (14-ounce) can diced tomatoes
- 2 cups chicken broth
- 3/4 cup water
- 1 1/8 cups long-grain brown rice
- 3/4 teaspoon dried thyme
- 3/4 teaspoon salt, or to taste
- 1/4++ teaspoon cayenne, or to taste
- 1/2 pound Okra, fresh or frozen
- 1-pound, shrimp medium (41/50 count)
Directions…
In a large pot, heat a little oil over medium high heat. Add sausage and cook until lightly browned. Remove from pot and set aside.
Add remaining oil, celery, onion and garlic. Cook until softened.
Stir in tomatoes, broth, water, rice, thyme, salt and cayenne. Bring to a boil, cover and simmer 35 minutes, stirring now and then.
Add okra and cooked sausage. Cook, uncovered, stirring frequently, until rice is tender, 10 to 15 minutes.
Add shrimp and continue cooking until cooked through.
Taste and season with more salt or cayenne if desired.
This is a recipe I think you will love IF you like shrimp and like the jambalaya wonderful taste. A meal in one pot with leftovers! What can be better than that, right?
I used the Whole Foods chicken Spicy Italian Sausage (already cooked) it was fabulous. Another great find were the tomatoes. There is only a 14-oz can, I used diced which just aren’t right, Ina even says so, but my husband likes diced tomatoes, so here we go. I found a brand I LOVE – CENTO PETITE DICED! They’re a TINY DICE!
