The Best (Meatless) Dinner Ever!

I didn’t have time to run to the store the other day and needed to make something for dinner. If it means not going out into traffic to shop at a busy time of day, believe me, I WILL find something in this house to make for dinner! This was SO GOOD, we had it two days in a row! It was quick, oh so delicious and it stuck with us. Asparagus is so good right now!

Roasted Sweet Potatoes

For just the two of us I’ll use one large or two small/medium sweet potatoes, peeled. Then I cut into rings about the width of my finger and then I cut each ring into bite size pieces. The smaller, the faster they cook. 375 degrees F. In a bowl add the cut up sweet potatoes, olive oil drizzle and S&P (I omitted the cinnamon for this recipe). Bake 20 minutes. Then flip and add the asparagus.

Roasted Asparagus

Asparagus, washed, ends snapped off, dried and they’re ready to toss into a bowl (or on the baking sheet) with olive oil, S&P. Bake at 425 degrees F for 6-8 minutes depending on how thick they are. Note: you’re finishing the sweet potatoes and adding the asparagus for the last 6-8 minutes, if the sweet potatoes look done, pull them out.

Brown Rice

I just add the amount of frozen brown rice that I think we’ll use (it’s precooked) to a casserole dish with a lid, pop in microwave 3 minutes and it’s done! I did chop up spinach and arugula and then topped it with rice, a quick drizzle of olive oil and a sprinkle of feta.

Hummus & Pita

I mixed a few spoonfuls of hummus, cucumber, tomato and feta – for a little more protein and delightfulness. Perfect with the pita.
