
I had a specific meal in mind but no recipe… A steak taco sounded so good to me, so I put together some flavors that compliment each other nicely and WOW, was it ever delicious! It was quick to make (I used stir fry beef). Here’s the recipe…
Quick Steak Tacos with Red Cabbage, Avocado, Cilantro & Lime!
Marinade
- Olive oil
- S & P
- Crushed Red Pepper (spice)
- Lime wedge, squeezed (juice only)
- 1 garlic clove, minced (I use a microplane)
- Cilantro, washed, dried, rough chop (one grab)
- Beef stir fry meat (I used a little less than 1/2 pound and it made 3-4 tacos)
I use just enough olive oil to coat the meat, so eyeball it, then add the rest of the ingredients and massage the bag to mix together, toss meat in and leave on the counter while you prepare other ingredients. It doesn’t need to marinate for long.
Taco Ingredients
- Red Cabbage, thinly sliced
- Avocado, pitted, peeled and sliced
- Cilantro, washed, dried, thick stems removed, and given a rough chop
Making the Tacos:
Heat a cast iron skillet, Wok or another heavy bottom pan that will sear meat well, like a Wok (I used cast iron). Heat the pan until a drip of water sizzles. Add avocado oil (won’t burn with high heat) on medium high. Add steak (without any extra marinade) and let sit without touching 3 minutes. Try not to crowd the pan. If you see it’s not browning, take a few paper towels and wipe the bottom of the pan to get some of the moisture out. After 3-4 minutes turn the stir fry pieces, you want it to look caramelized where you see where the meat has browned well. This is the good stuff!
When done, heat your tortillas (flour or corn), add the beef slices, avocado, cabbage, cilantro and a squeeze of lime. You can also use a chipotle mayo or Yum Yum sauce (from the grocery store unless you have time to make your own). My husband had 2 tacos, I had one, and with the two small pieces of steak left in the pan, I just topped it with avocado, purple cabbage, cilantro and lime – no sauce. Wow, delicious. There is SO MUCH FLAVOR in the meat!
