Grilled chicken and corn with a side of macaroni salad… A quick and easy dinner is ideal on a warm day, especially when the most time consuming part of it (macaroni salad) can be made in the morning.
Since it’s already warming up here in Charleston, we decided to grill a few ears of corn (no oil; grilled corn has so much more flavor than boiled!) and a few chicken breasts (drizzled with a wee bit of olive oil so they don’t stick to the grate and a sprinkle of S&P). Fred does the grilling, which is the best part of summer!
I made a macaroni salad in the morning and it was nice and chilled (as was the house!) when we ate. I’ve posted the recipe for my macaroni salad before (click on the link) – but it’s really more of a guide – Add more of what you like and less of what you don’t. I used red pepper and it was divine – it added so much flavor and crunch. Red pepper is sweeter than green and is so pretty in the salad. This time I used seashell shaped pasta, which is kind of nice because the little bits of egg, radish, pepper, and celery were tucked inside those shells.
This is a quick dinner that is oh so tasty!
