Election Anxiety Cooking/Baking

The 2020 Presidential election is today. This is truly the most important election of my life. As we wait for the polls to be counted – I needed to stay busy, so… (this isn’t my normal day for posting, but thought I would say hello!)

Clementine’s Cookies

I’ve been in the kitchen. I baked some fabulous oatmeal, chocolate chip, walnut cookies that I posted years ago. It’s a recipe favorite, they’re called CLEMENTINE’S OATMEAL CHOCOLATE CHIP COOKIES and they are nothing short of amazing. I like to make mine small and I also freeze half of them by dropping teaspoonfuls of dough onto a wax paper lined cookie sheet and popping into the freezer until hard. Then drop them in a Ziplock (be sure to label baking temp and time on outside of bag).

Beef & Green Bean Stir Fry

I also had a pound of stir fry meat in the freezer, so I defrosted that and I’m making a to-die-for favorite recipe, BEEF AND GREEN BEAN STIR FRY – it’s out of this world. I used Trader Joe’s Haricot Verts (frozen) which I thawed and got the excess water out of. I will freeze half and we’ll have another exquisite meal in a few weeks.

I better get busy, thought I would pop in and see what y’all are up to. Just chillin’, or are you like me and you’ve got yourself immersed in a project of some sort to stay busy?
