
Tacos. Who doesn’t love a good taco. This is a quick meal to throw together, especially if you can run to Whole Foods and grab a container of freshly made guacamole, while you’re there you can also grab a container of fresh salsa (or this day, I just cut up a few campari tomatoes)…
It’s basically a bundle of what you love. You can use meat or go meatless and use brown rice and black beans, which we’ve also done. We haven’t had beef in a while so for the two of us, we bought 1/2# lean ground beef. Browned it in a nonstick skillet. Sprinkled some organic (Frontier brand) taco seasoning (in a little shaker), and added a wee bit of water after the hamburger was browned, let the water cook down a few minutes.
Then I heated a few organic flour tortillas (I love corn tortillas, but had flour, and they’re easier to work with), I added a sprinkle of grated cheddar cheese, a light smear of sour cream and a big smear of guacamole. Then had a few chips and guac to go along with it. I made one for me and two for Fred.
Add anything else you like! Cilantro would have been amazing with this…
