Spinach, Feta & Rice Casserole

I saw this recipe, as I am always in search of a new recipe to try 👀 – something healthy as a good side dish, that could even stand on it’s own as a meal with a salad. #winwin This recipe is quick and tasty, and as I mentioned it’s full of healthy ingredients as well.

I was reading Eating Well magazine, perusing in search of something that sounded just right… this fit the bill. Spinach, brown rice, feta, fresh dill and a topping of a little sour cream was nice, but I found something else that worked like magic. TZATZIKI! I shared a quick recipe for tzatziki last week, and since you need dill for this recipe, you might as well make the tzatziki to go along with!

There is very little that I changed with this recipe, grated garlic I did not add, but if you love garlic use it! You can visit Eating Well’s website for this recipe, which you can easily print! They call it a “casserole version of spanakopita” great description!

My sticky note version of this recipe (with anything I did differently):

  • 3 tablespoons extra-virgin olive oil
  • 1/2 cup chopped onion
  • 1- 10oz. pkg frozen spinach, thawed and SQEEZED DRY
  • 3 cups COOKED brown rice
  • 3/4 cup crumbled feta
  • 1/4 cup chopped fresh dill
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/4 cup sour cream
  • 1 tablespoon lemon zest

Oven 425℉

Large skillet (ovenproof), cook onion about 4 minutes (light brown).

Add squeezed spinach (and garlic if using) – cook 1 minute – then remove from heat and let cool a bit.

Add cooked rice, dill, S&P, feta – Stir.

In medium bowl: whisk eggs and sour cream. Add to rice mixture and stir to combine.

Smooth sour cream mixture over top of rice mixture.

Bake 25 minutes, let stand 5. Can top with sour cream (or tzatziki).

Note: the directions for where to use lemon zest were missing on the EW website, so I believe I added it to the squeezed spinach – I read that others added it to the cooked rice and others added it to the sour cream mixture. Everyone said it was good – so it’s not too important where you add it…
