You know what it’s like to have a fabulous lunch – A lunch that makes you do a happy dance while you’re eating it? One that you look so forward to the next day? Well, this is that lunch! It’s light, and you feel good after you eat it. I’ve been having avocado toast with tomato for breakfast, this for lunch and then a variety of different dinners. I’m not perfect, I still like a few dark chocolate M&M’s on occasion, ha ha. I never cared much about Taboule until I ran across this brand…
I was hooked on Whole Foods organic hummus, until they were out of stock. I saw this by Cedar’s and it was on sale, so I tried it. #getout It was fabulous! After eating celery and peanut butter and a yogurt, I was looking for a different lunch to have. I’ve never been a fan of taboule – but I thought I would give it another try. I’ve only had it with pita. I thought maybe if I added hummus I might like it a little more?
I bought some whole wheat pitas. Wrapped in a damp paper towel and zapped in microwave for 20 seconds until hot. Then I cut the pita into pieces, spread the hummus and then added the taboule (and pressed it down into the hummus a wee bit so it wouldn’t fall off). Time for a taste test. WHOAAA!
💃💃💃💃💃💃 Happy Dance for sure! I threw a handful of grapes to the mix and win-win. This is delicious and I cannot wait for tomorrow!
