
Sometimes we need a break in the kitchen – it doesn’t happen often, but once in a while we make something good, but fast to prepare – this is beyond fabulous! So many options of what to add to it, and I have a trick I learned long ago about heating taco shells…
I made these tacos with the Garden of Eatin Taco Kit – available in many stores, ours was from Whole Foods. We used to buy the blue corn taco kit (same company) – the blue corn is fabulous – I didn’t see it this time, so we tried these. VERY GOOD, would definitely buy again!
You just add a pound of ground beef (we used lean, grass-fed), turkey or chicken, add the seasoning packet and a little water, cook for 5 minutes and then heat shells and serve.
Years ago I read a hot tip about eating tacos at home. When you fill the shell with the meat mixture and THEN heat the taco shell for 5 minutes the shell isn’t as brittle and doesn’t break as easily. It works! We topped ours with shredded cheddar, chopped tomatoes, shredded romaine lettuce and a drizzle of the taco sauce (included). I served it with an avocado that I mixed with lime juice and a few tortilla chips – or you could add the guac to the taco.
You won’t believe how good these are and they heat up well for another meal!
