
Trick or Treating, dressing up in fun costumes, going to Halloween parties, eating candy, even carving the pumpkin are probably most people’s favorite Halloween memories. Mine has always been the pumpkin seeds, well, at least as I got older! If you’ve got a pumpkin and you’re going to carve it – take a few minutes and roast those seeds and be in for a treat of a lifetime!
It couldn’t be easier to do. Once you scoop out the innards of the pumpkin to get it ready for carving, simply pull off all the stringy, slimy, orange pulp, then pop the seeds into a colander and give them a good rinse. Next step, I spread out paper towels and spread them out, drying the seeds – important so they get crispy and give you that wonderful CrUnCh! Once dry, into a bowl with a drizzle of olive oil to coat.
Oven at 325℉ . On an oiled cookie sheet, add seeds and a sprinkle of sea salt. Bake for 20-30 minutes or until they’re crispy. Let cool and ENJOY!!
