Avocado Toast with Greens and a Sunny Side Up Egg!

I have always admired the creative ability really good chefs have. They can take a mundane meal and make it over the top, WOW! Have you had a meal somewhere special and were completely blown away by it? The taste, look, texture – everything about it was perfection. Now mine doesn’t look anywhere near the version of the Chef at The Swag – but I tried, and let me tell you, this is darn good! I made this three mornings in a row. It really is perfect for breakfast, lunch or dinner. The first day took me a little longer, but after I had my swing down, it went much faster. Of course I had enough pans/dishes to have served Thanksgiving Dinner, but that’s another story…

TOAST

Nothing like beginning your day the right way! I started my toast with sourdough, but any hearty type bread would do! Pop it in the toaster when you’re getting ready to assemble.

AVOCADO

I used a plate and mashed the avocado, then added a little drizzle of olive oil, pepper, and a squeeze of lemon. Mush around until it’s a nice texture.

GREENS

I had my greens (lacinato kale this time) washed/dried/chopped. Since Vidalia onions are in season, I also chopped a wedge of onion. I heated olive oil in a non-stick pan, once hot I tossed in the greens and the onion. Sautéed until wilted. The onions were AH-MAZING!

Assembly

I then transferred the greens to a small bowl and covered it with a plate to keep warm – I didn’t over cook so the plate also helped to keep it cooking a wee bit. I wiped out the pan and prepared to cook the egg. I used a little butter, then cracked the eggs (one for each toast), cooking on LOW is key. Once the egg sets and you can tell it’s beginning to cook drop about a tablespoon of water into the pan and cover it with a tight fitting lid. Keep peeking at it to determine your degree of wellness. Do you like your yolk spilling out (which is so pretty), or do you like it to jiggle? Hey, it’s your egg, cook it exactly as YOU like it.

Then top the toast with the avocado, the egg and the greens. Prepared to be blown away. And, yes! It’s THAT GOOD!
