A cold, crunchy salad with fresh ingredients bursting with flavor and the delightful twang of the PRO (pickled red onions) – Could there be anything better on a very warm day? The first time I made this it was slim pickins’ with the peach slices as one of the peaches didn’t make it home from the store without turning a horrible color and croaking right in front of my eyes. $3.44 for 2 peaches. #wow This time the peach was perfection!
This salad was quick to throw together. The vinaigrette is perfection and works perfectly with these ingredients. My husband said, “Wow, I don’t want this to end”… Yay! #winnerwinnersaladfordinner
Salad with Grilled chicken, Goat Cheese, Cucumbers, PRO and Dill!
- Crunchy lettuce – I used a green leaf lettuce from Georgia, it was fabulous
- Cucumber (regular or English), peeled and sliced
- Peaches, peeled and sliced
- Goat Cheese (Chèvre) – I used Trader Joe’s brand and it was excellent!
- PRO (pickled red onions) – recipe HERE
- Fresh dill, washed, dried and chopped (optional)
- Grilled chicken (mine was leftover from the day before), chopped or cut with scissors
- Salt, like Saltverk (a gourmet flake salt from Iceland) – highly recommend!
Lemon Vinaigrette
- 2 tablespoons olive oil
- 1.5 – 2 tablespoons fresh lemon juice
- honey, a small amount (a few drops or more to taste)
- S&P
Place all ingredients into a jar, cover with the lid then shake. Make double if you like a lot of dressing! It’s so good on everything!
👩💻 Until next time…
