
Charleston, South Carolina. It’s hot. I love to have dinner ready early so I don’t need to be in the kitchen when it’s at its warmest. This was a wonderful meal, prepared ahead (except for the corn, which took 6 minutes). You could easily substitute a salad or whatever else you like. Everything here literally took minutes and is the freshest of the fresh!
Taking advantage of the freshest ingredients is key in coming up with the best dinner. This night we had shrimp cocktail with homemade cocktail sauce (I can’t find a bottled brand I like more), NYT Best Gazpacho and steamed corn on the cob (Boil a little water with salt, add the shucked corn, cover – 6 minutes). #lifeisgood (Tap links for recipes).
We sit in our sunroom for dinner when the dining room table is full (jigsaw puzzle), once we get going on it we can move back and sit at the table like proper people, ha ha. It’s fun to have a few different seating areas, especially in a smaller home.
