Dark & Stormy to Bright & Light…

The skies have been dark and stormy for the past four? days – I think i’ve lost count. The threat of tropical weather is no party but Lil Debby has passed by Charleston and we are grateful. It was a nice treat to run to the store and buy some fresh produce for dinner… My avocado is basking in the sun in attempt to get ripe enough for dinner, ha ha.

After days of watching weather alerts, listening to the emergency alerts go off on my phone 😳 it’s time to chill, get back to reading my book, sipping a nice iced tea and chilling.

Especially since I saw the updated tropical forecast for the rest of this season. Lawdy – may they all be spun into nothing or pushed out into the ocean far from every living thing.

For those of you who live in a tropical climate with these types of storms. I need food ideas for the next time. I made one meal and we ate it for days. 😵‍💫 I just want a nice fresh salad, the grocery store didn’t agree, so instead I’ll mix up a brown rice/black beans/salsa/guac (if my avocado can ripen quickly – I have it on the back porch!) and pepper jack cheese. If there is another storm, maybe the fresh corn, black bean enchiladas – oh my goodness! Too good for words!
