A Busy Day? Take A Deep Breath…

This was an unexpected surprise as we headed over the bridge to Mount Pleasant, SC. We were out early the other morning while running errands. There was such a beautiful color across the horizon and then *poof* the sun appeared and quickly rose. In the span of the bridge we saw it rise considerably. What an awesome way to put things into perspective. Busy days and times are among many of us – take a moment to absorb the quiet and any peaceful scene you may encounter.

Tomorrow is Thanksgiving. A day to be truly thankful for everyone in your life, for your family and friends, pets, homes/apartments, the sun rising for yet another day. So much to be thankful for.

Today I’ll be whipping up a recipe to take with me tomorrow. As someone with a food allergy (so frustrating) 🙄 going out to eat and eating anywhere but home can be a challenge. A soy allergy is a bit more tricky than some of the others since soy goes by many names (i.e. miso, tamari, soy, soybeans, soya, soy protein, soy protein isolate, soy flour – which is now finding its way into everything. To make it even more confusing, I CAN eat soybean oil and soy lecithin – (at first I had to abstain from ALL, so that includes ingredients like “natural flavoring”, Guar gum, etc. etc. etc. the list is looooong). Long story shorter, I try to bring a little something with me that I can eat in case I notice an errant ingredient that crosses off yet another wonderful dish. So, if it turns out, I’ll let you know and I’ll post the recipe, if it doesn’t – then… maybe I had two pieces of pumpkin pie 😉 #yagottadowhatyagottado

Hope you have a wonderful Thanksgiving tomorrow. If you’re with friends and family, celebrate the good times. If you happen to be home alone, savor the peace and quiet, find a good book, enjoy that cup of tea or coffee and take a few minutes to think about all we have to be grateful for. The future is a definite unknown, but we have today, this hour, this minute to be thankful.
