
I love a quick to throw together dinner. Perfect when you’ve been out running errands and hear your stomach growling. With minimum prep you can have this on the table in no time – and this was so delicious that we savored every single bite!
A Quick Dinner Salad
- Romaine lettuce (I used organic)
- Tomatoes, sliced
- Cucumber, sliced
- 2 Hard-boiled eggs
- Cheddar cheese (or your favorite type) cut in small pieces
- 1-2 slices of ham (more/less to your preference
- Red onion, chopped small (however much you like)
- Bleu cheese dressing (or your favorite)
Hard boil the eggs in the morning so they’re ready to chop when you make dinner. (Add eggs to a pan of water, then turn it on, bring to a boil and then turn off and cover – set timer for 13 minutes. Peel, cool and refrigerate).
When it’s almost time to eat, chop your tomatoes, cucumbers, hard boiled eggs, cheddar, ham and red onion. Add to the torn romaine lettuce in each salad bowl. Add a spoonful of dressing on top of each salad. A little pepper and you’re ready to eat.
How’s that for fast? You could also completely prep it ahead of time, so that when you come in all you have to do is add the dressing. I like mine super fresh so I opted to do it right before we ate. We ate in silence. It was that good.
*Ham note: every once in a while I’ll buy 1# of ham at Honey Baked Ham. I love that they sell it this way. I only used 1 slice/salad – actually could even split a piece or leave out entirely. I’m going to freeze a few slices for bean soup that I’m making later this week.
