I hard boil eggs, usually six (so I have 3 days worth) and keep them in an airtight glass container with a damp paper towel to keep from drying out. To make hard boiled eggs: I put 6 eggs in a pan with taller sides, add water covering the eggs by an inch or so and turn on. Once they start to boil turn OFF the heat and cover the pan. Set the timer for 13 minutes. Perfection! I then rinse in cold water and let them sit a few minutes before peeling.
Avocado toast. Cut a ripe avocado in half, remove the seed, scoop out the green avocado into a small bowl. Then mash it (optional), spread it on the toast, a little drizzle of EVOO, S&P, and a good sprinkle of Za’atar if you have it (a wonderful seasoning)!
To serve the hard boiled egg, I drizzle a little EVOO on a plate, add the egg that I sliced in half, S&P – and *poof* #timetoeat
It’s prettier than it looks, this was a cloudy day. Also, in this instance I used Dave’s Killer Bread, toasted and it turned soggy – sourdough bread works perfectly as does most other bread.
