
The day was hot. I had just come in from walking and I was starving. Did I really want to turn the stove on? No. Hmmm, I have an idea – and guess what, it turned out to be far better than I imagined and healthier too!
I made hard boiled eggs last night and refrigerated. I pulled a piece of sourdough out of the freezer and popped it in the toaster. I took out a hard boiled egg and sliced it. After the bread was toasted, I drizzled a tiny bit of olive oil (vs. butter) on the bread, then I topped it with the slices of hard boiled egg. A quarter turn of sea salt, some black pepper and guess what? TIME. TO. EAT!
I didn’t expect olive oil on the toast to be quite as good as it was. Butter is good, it’s tasty, but it’s also indulgent. Olive oil feels like health serum. Ha.
So many options if you like other toppings but for now I’m on this kick. Along with fresh cantaloupe that I cut up the night before so it’s nice and cold. Oh la la! #perfection
