Updated Recipe: Cold Cucumber Soup – A Lifesaver!

Sometimes it really pays to think ahead, especially in this heat. When you know you’ll have a long day and won’t feel like cooking when you come home, make a plan. A while back I knew we were going to be gone for quite a while. The heat is on, and I knew when we got home there would be no oomph to whip something up. So, I whipped this up the day before. HAPPY DANCE! What a lifesaver to have something ready when you arrive home. Just sit down and enjoy. So quick and easy – PERFECT for hot weather!

Just a few pulses in the Vitamix (or other blender) after prepping a few ingredients and you are done! I use my Classico Spaghetti Sauce jars (daily!) usually for leftover coffee that I then drink cold 💗, but this time it was to chill a double batch of Cold Cucumber Soup.

🥒 2025 UPDATE: I’ve posted the regular recipe HERE before, but this is a little different. I didn’t have buttermilk and totally thought I DID buy it. So, in lieu of buttermilk I used part leftover 2% Fage plain Greek yogurt, a partial 5% leftover Fage plain Greek yogurt, a little milk and a SMALL wedge of lemon squeezed. I put this all into a liquid measuring cup and filled it to almost 1.5 cups. Let it sit while I prepped the cucumbers, then gave it a good stir, dumped it in the blender with the onion, dill, olive oil, rice wine vinegar and salt that I had already processed.

I dropped the chunks of (peeled, seeded) cucumber into the Vitamix (4- large cucs) and pulsed it 2x (ON. OFF.) then checked it, sometimes that’s enough, I gave it another pulse or two (ON. OFF.) Do it until it hits your desired consistency. Pour it into jars (or other glass storage) and let it chill. I like to let it chill most of the day, but usually overnight. It takes a while for it to get really cold and that’s when it truly comes together.
