Boursin Pasta with Tomatoes & Spinach – it’s so easy!

Boursin Cheese Pasta (recipe)

In case you haven’t heard about the viral Boursin cheese recipes floating around the internet, let me enlighten you. They will make your world a brighter place. So quick and easy – in a very short time you can end up with a restaurant quality meal (my opinion). I made this for the two of us and we had leftovers a few days later. #perfection Just see how easy it is with so little ingredients!

I’ve read so many different recipe for this and have split the difference, have taken all the things I like about it and this is what I came up with (not my recipe, this is more of a guide, add more of what you like, less of what you don’t, feel free to add other ingredients that you think may be good (and let me know how it goes!) – see for yourself in four short images.

BOURSIN PASTA

Ingredients:

  • Boursin cheese
  • Grape tomatoes, cherry tomatoes, etc. I used a 16oz pack
  • Pepper
  • Oregano
  • Basil
  • OLIVE OIL
  • 300 grams of Rigatoni (look for a thin one!)
  • A few big handfuls of baby spinach (big stems removed), chopped
  • **Reserve some pasta water!!!**

Images show a before/after with the tomatoes, Boursin cheese (best price I found is at Trader Joe’s!) – I used a larger container of organic tomatoes from Trader Joe’s, but you can use a regular container, or two containers or no tomatoes! You simply olive oil the baking dish (mine was a lasagna size), then plop in the washed/dried tomatoes, drizzle olive oil and be sure they’re coated. Sprinkle pepper, oregano, basil and drizzle olive oil over the top (cheese included). Pop into the oven for about 25 minutes (or until tomatoes are bursting and cheese looks melty).

You see how the tomatoes have shriveled and the cheese is melty. Oh, la la! Now toss the chopped baby spinach into the pan and stir to mix the melted cheese with the tomatoes and spinach. Add a few splashes of pasta water until it’s the consistency you like. Next, dump the cooked pasta (I use a stainless spider strainer so you still get a little pasta water – I use THIS ONE) – now stir to mix the cheese/tomato/spinach into the pasta, stir so it gets into the tube of the pasta. Oh, this is delicious.
