ACORN SQUASH that everyone will love!

roasted acorn squash - so delicious!

Acorn squash. Eh. I’ve made it several times for us and neither of us are a fan. This time of year it’s plentiful and piques my interest. I ran across a quick and easy recipe for it and in the comments saw several that said “Even those who dislike acorn squash LOVE this recipe”. Ok, challenge accepted. Wow, they were so right. Twice in a week we’ve had it!

For two of us, I roast 1 acorn squash. This is Ina Garten’s recipe and it’s so easy!

MAPLE ROASTED ACORN SQUASH (Ina Garten) recipe is for 2:

  • 1 medium acorn squash, cut in half from stem, unpeeled and seeded
  • 1 tablespoon butter
  • 1 tablespoon+ (real) maple syrup
  • Olive oil
  • kosher salt + black pepper

Oven 350℉. Place acorn halves on a baking sheet covered in foil for easy cleanup. Rub olive oil on outer portion and top rim. Rub 1/2 tablespoon butter on inside cavity of each half. Drizzle 1/2 tablespoon maple syrup into cavity of each half. Sprinkle with salt and pepper and place in oven. Roast 40-60 minutes.

Serve hot!

Note: I have increased the temp to 375 and 400 while I’ve had something else in the oven and it was still perfect! I just keep checking. It’s done when easily pierced with a fork.
