I saw this recipe for Dark Chocolate Almonds by Joy Bauer on the Today Show – It was a segment with Joy Bauer (health and nutrition expert) she whipped this up in minutes, it’s beautiful, delicious – and healthy? #winwin There is another perk to making this recipe – your house will smell divine! Joy Bauer’s Dark Chocolate Almonds
Yield: 8 Servings
- 1 egg white
- 1 teaspoon vanilla extract
- 2 cups RAW almonds
- 1/4 cup granulated sugar
- 3 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
Preheat the oven to 275℉. Line a large baking sheet with parchment paper or foil and mist with cooking spray (I didn’t have any, so I put a little avocado oil on a paper towel and wiped my baking sheet with it.
In a large bowl: combine egg white and vanilla. Whip (I just used a whisk) the egg white and vanilla until very frothy. Then add the almonds to the bowl and stir until they are completely soaked in egg white, approximately 2 minutes.
In a small bowl: stir together the sugar, cocoa powder and salt until mixed well. Add the cocoa/sugar mix to the almonds. Stir until the dry ingredients are completely mixed in and the almonds are evenly coated (you shouldn’t see any dry cocoa powder on the bottom of the bowl).
Pour the almonds onto the prepared baking sheet and spread into a single even layer with either your hands, spatula, or back of a large spoon.
Bake for 25 minutes on the middle oven rack.
Cool at least 15 minutes. Break the almonds apart before serving and store in an airtight container.
I broke mine into small bark-like pieces – I thought it was pretty like that. This would make a wonderful gift.
