Veggie Pasta with Walnuts, Olives and Feta!

MmmmMmmm Good!

This “recipe” is a family favorite. My mom has some rendition of this most days of the week. Pasta (all different pastas, brown rice pasta, regular pasta, multigrain pasta – each adds its own twist) – This is a pretty quick meal that you can change up to use what you’ve got. Don’t want to use pasta? Use Zoodles or the like, I think a little pasta will keep you full longer, just load up on the veggies.

I usually turn on a pot of water for the pasta while I cut up the zucchini, onion, sometimes I add banana pepper or red pepper – use whatever you like. Mushrooms are good, grape tomatoes, etc. You can make this every night and it’ll never be the same! This is Fred’s plate. I usually top mine with a sprinkle of parmesan. Fred tops his with olives and feta. Both are good. Sometimes I toast the walnuts, sometimes I don’t – and it’s still delicious, it’s the crunch it gives the dish!
