
My husband loves baked chicken. “What would you like for dinner?” Baked chicken. Nearly every time. He loves the crispy skin which tastes like fried chicken. I use bone in/skin on chicken breasts. Rub with olive oil S&P and pop into the oven at 350℉ for an hour. But what to go with it? Oooh! I know! Crispy baked potato fries – they were as gorgeous as they were delicious. Here’s how:
Note: many recipes talk about soaking sliced potatoes in hot (or cold) water for a period of time to get rid of the starch so they’ll crisp up. I didn’t want them too crispy where you feel like you may lose a portion of a tooth with each bite. I wanted them to be tasty, a tad crispy and outrageously delicious. This is what I did – Note, I was also working around the chicken that I had in the oven… so here goes.
Crispy Oven Fries for 2
- 2 Russet potatoes, washed & dried, then sliced into about 1/4″ – 1/3″ fries
- Olive Oil
- Salt & Pepper
- Cajun Seasoning (optional)
After slicing the fries into fairly thin slices (lengthwise), take a clean kitchen towel and dry each slice before dropping into a large bowl. Lightly drizzle with olive oil and rub all surfaces of the potato. A light sprinkle of salt and pepper and if cajun seasoning sounds tasty go ahead with that as well. It’s divine!
Use a half baking sheet – I rub the bottom of the bowl with my hands and “grease” the baking sheet like that with the residual oil at the bottom of the potatoes. Spread out the potatoes to give a wee bit of room between each.
After the chicken has been baking at 350℉ for 30 minutes, I put the potatoes in the oven for 30 minutes. Then I take out the chicken and take out the fries. Turn the oven up to 425℉ (convection setting if you have it). Flip the fries and pop back into the oven. Check after 20 minutes (you can flip more frequently so they are evenly brown). They may be done sooner or later than 20 minutes – once they’re getting close, I pop the chicken back into the oven for a few minutes so it’s hot.
These are the best fries ever! Truly indulgent with all good ingredients. #cantbeatthat
