
We all like it a little bit different. This recipe is a guide. As I always say, add more of what you like, less of what you don’t and leave out anything you don’t like. I haven’t made this in years and it was a treat. I had already hard boiled some eggs that were in the fridge, so this only took a few minutes to throw together. #delish
I’ve never added pickles or pickle juice in the past, but this time I cut up 2 dill pickle slices and added to the egg salad. What a treat. The next time I made it I cut up a little celery (I love crunch) – it was good too, or even the inner celery leaves (full of good vitamins), I diced up and tossed into the egg salad.
EGG SALAD SANDWICHES
Makes 2 sandwiches
Ingredients
- 3 hard boiled eggs
- mayonnaise
- yellow mustard
- S&P
- OPTIONAL: diced pickles, green onions, red onions, celery, celery leaves or dill.
Directions
- Cut up three hard boiled eggs, normally I put them in a bowl and use a knife and fork. Get to the consistency that you prefer. Add mayonnaise. Add a little at a time, remember, you can always add more.
- Add a little yellow mustard (or if you prefer, you can use dijon).
- Add your optional ingredients if using. I like a few pickles chopped up.
- Mix together and add salt and pepper.
Time to toast the bread (we like sourdough) and add the egg salad… So good!

Cold Cucumber Soup, which I like to make early in the morning or even the night before. I double this recipe and it makes 2 – 24oz. spaghetti jar’s full! It’s good with chilled shrimp cocktail or avocado toast!
