I made this recipe on a cold day when something warm and comforting sounded divine. I ran across this recipe (Pinterest to the rescue!), I made a few changes to suit our tastes, and will make this again minus the cheese and will try using brown rice (measurements will be different, so don’t substitute brown rice in this recipe, it cooks for a longer period of time). This recipe was delicious! I’m glad I ran across it!
I found this recipe on a blog called realhousemoms.com. The recipe below is my version of her (very good) recipe. If you love a lot of cheese, this recipe is for you. Next time I’m going to leave all but the parmesan out – and have some grated available to sprinkle on top if you like. Options are good!
I love broccolini, it’s tender and tasty, you can certainly substitute regular broccoli (like the original recipe) – I also don’t add salt since there is quite a bit of sodium from the parmesan, you won’t miss it one bit!

Broccolini Chicken Rice Casserole
Note: I bake 3 chicken breasts (bone/skin on) at 350 degrees F for about 1 hour (or until done). I use meat from two chicken breasts for this recipe and another for a chicken salad.
1 tablespoon olive oil
1 small onion, minced
1 ½ cups long grain white rice
Chicken, cooked and shredded (about 2 cups)
2 cups chicken broth (low or no sodium)
1 cup milk
¾ cup parmesan cheese, grated
2 heads of broccolini (baby broccoli) cut into bite size pieces
Cheddar cheese to sprinkle (about ½ cup)
In large saucepan (or dutch oven) heat the olive oil, add onion, cook until translucent.
Add rice to pan, stir to coat with oil, then add the chicken broth, milk, and pepper. Place lid on pan and turn down to low.
Cook for 12 minutes. On top of the rice add the shredded chicken and spread evenly. On top of chicken add broccolini. COVER, but DO NOT STIR.
Cook about 8 minutes, so the broccolini is steaming, the chicken is heating and the rice is cooking.
Remove from stove and sprinkle cheese (or serve and let each person add cheese if they like). Can cover and let rest 5 minutes to melt the cheese.
