
I have such a good time at Whole Foods in the veggie department. I can rarely make my way through the store without seeing a standout veggie just screaming for me to snap a photo.
Beets. I never thought I liked them. They taste like dirt (to me). BUT… I tried roasting them and WOW! Roasting brings out the sweetness and guess what? No dirt taste 🙂
From what I’ve read, you do not have to peel them (I did), because after they’re roasted the skin will slip right off. If you have a few that are larger than I cut them into chunks so they’re close to the same size.
How I make them…
I give them a good rinse and then peel. Cutting any larger beets into pieces to try to keep them approximately the same size. Put into a bowl with a swirl of Extra Virgin Olive Oil (EVOO), salt and pepper and toss to coat. Then place on an oiled cookie sheet.
Bake them in a preheated oven at 425℉ for 10-15 minutes or until tender.
Usually you see red beets, but these golden beets really stood out! Give it a try some time!

Oh I’m the same at Fresh Market, everything looks like a still life begging to be painted! I did one for my “At The Root” series of Orange beets, and I used to just love them. But they aren’t allowed on my KETO diet :((

I do the same thing at the farmers market in the summer. Sometimes I get ready to leave and realize I haven’t bought anything, I’ve only taken pictures. I use the photos to paint from.
