
We ordered a CSA box a few weeks ago and in it were 2 zucchini – one we made a pasta dish with and the other I made as a side dish using this recipe.
I found this PARMESAN ZUCCHINI recipe on dinneratthezoo.com and it’s fabulous!! Sara’s recipe was for 1lb. of zucchini, which you quarter and then cut into (1/2″) wedges. Olive oil the zucchini and toss it around, then add the breadcrumbs (I used Italian Seasoned), parmesan, salt and pepper.
Oven at 425℉ – 10-15 minutes – I had my oven on convection. Sara mentions that you can serve with marinara, but it was fabulous without it.

You will love! Just don’t slice too thin (or too thick) – about 1/2″ is perfect!
