
Warm and comforting – that’s what a bowl of oatmeal is to me. After Thanksgiving I wanted light food – Thanksgiving dinner (and leftovers) was nice but I need to get back on track. Oatmeal – the perfect food!
I made enough for the two of us, I had a Honeycrisp apple that I washed and sliced thin and in small pieces – I added 2 cups of water to a saucepan and added the apples, I cooked on medium until it started to boil, then I added 1 cup of oatmeal (I like Trader Joe’s, my husband like Quaker Oats – we buy the Old Fashioned Oats), then turned down to low and cooked about 5 minutes (follow package directions) – I also added cinnamon, then topped with toasted walnuts and a tiny splash of half and half (or milk) and a tiny spoon of brown sugar. If I make it just for myself I also add raisins.
Wow. This is amazing and it sticks with you! If it’s cold out this will definitely warm you up! Some days around here #itswhatsfordinner
