A Breakfast That Will Keep You Moving!

Yes, even I overcook eggs… #damnit

Decisions, decisions. What to make for breakfast? What to make for lunch? What to make for dinner? Is anyone else becoming weary from thinking about it a little too often? I wasn’t sure what I wanted, I just knew it wasn’t scrambled eggs, or a sourdough English muffin. I wanted something that was going to make me FEEL GOOD, give me lots of ENERGY. I think this did the trick!

Did I mention this was quick and easy (thank you, Trader Joe’s Organic Brown Rice that you pop in the microwave for 3 minutes… tada!). I bought some fabulous organic kale the other day at Whole Foods. Cleaned it up good, pulling the leaves off the stem, sliced it, and sautéed it in olive oil with some thin sliced sweet onions. Once the kale started to wilt I gave it a squeeze of lemon (in lieu of salt) and a sprinkle of pepper. I popped a lid on it and turned the burner to low until it was exactly how I like it. (I don’t time it, I just keep checking on it and taste a piece, see if it’s the texture you like them BAM, it’s done!)

I did add a little water (maybe 1/4 cup total) just to keep the kale from sticking to the bottom of the pan. I had started the egg in a nonstick skillet with a minuscule amount of butter (or did I use olive oil??), crack the egg, turn the burner down and put a lid on. Keep checking it (important, as you can see I clearly did not follow my own advice) until it’s the consistency that you like. I like my yolk soft and spilling out a little bit. I was past that point in the image above but it was still tasty.

Not pictured, is the topping! Ugh… I sautéed some thin sliced turnips pieces in olive oil with a sprinkle of Cajun seasoning (Frontier Coop brand). I only had a little turnip left over. I buy them for Charlie, and dice them small (he like treats often, so he gets a mix of different veggies. There was some that wouldn’t fit in his treat container in the fridge, so I diced it and sautéed. It was a nice little topping full of flavor!

For dessert… a Sumo orange. Does it get any better? I didn’t think so! 🍊💪🙌
