
The other day I made Ina Garten’s Parmesan Chicken Salad, which is a such a treat! It’s a wonderful sautéed chicken breast (with bread crumbs and parmesan) atop a simple salad of baby greens with a quick lemon vinaigrette. It tastes so fresh and delicious. I had extra chicken, so I made extra for us to eat the next day. Oh My!
When I tell you this is over the top wonderful, I truly mean it. We ate the chicken cold (although it could be reheated, we prefer it cold) – it has such wonderful taste. I sautéed some baby spinach in olive oil and gave it a squeeze of lemon and some grated black pepper. I cooked 1/2 package of fresh pasta, which is wonderful when you’re in a hurry. 2 minutes and it’s done! A quick drizzle of olive oil, parmesan and fresh pepper (on this occasion I also snipped off some frozen parsley that I had in the freezer which made it pretty). This meal was created in no time. Sometimes the day gets away from you and it’s nice to have something quick and easy that is SO GOOD! Ina’s original recipe HERE. You can just make the chicken portion of the recipe, or make the salad like I did for one meal, and the leftover chicken for another!
