Holidays can be indulgent.
End of December, I started on a health tangent – so we had salmon, baked potato and a veg… (with a wonderful mustard sauce that I came up with, I wrote it on the back of something. Which I just now thought of, hoping I can find whatever it was that I wrote on? #chancesareslim) I even made Northern beans (with a skinny little piece of ham), rice, collards and homemade cornbread. It was out of this world. I was surprised how much I enjoyed this meal. (Recipe coming soon!) I know that should have been New Years Day, but…
We splurged and had lasagna on New Years Day. Then I quickly froze the remainder of it, ha ha. It was delightful. The beans/collards/cornbread were out of this world good. So after all this wonderful food I needed something light but filling. This was perfection.
RASPBERRY YOGURT PARFAIT
- Fage 2% Greek yogurt (plain)
- fresh raspberries (or frozen/thawed)
- granola (I buy the kind with no fruit – Usually Cascading Farms, sometimes, Quaker)
- honey to drizzle
You can either put this in a bowl (easiest) or make it pretty in a glass (trickier)
BOWL: If i’m using a bowl, I just put in a few spoons of yogurt, sprinkle the granola and fruit and drizzle the honey.
GLASS: I layer if I’m using a glass, mainly because it’s pretty. Just layer however you wish.

BANANA YOGURT PARFAIT WITH CINNAMON
- 1/2-1 banana
- Fage 2% yogurt
- granola (see note above)
- honey to drizzle
- cinnamon on top
Same method as above using either a glass or a bowl. I add a little banana to each layer. The addition of cinnamon with the banana takes it over the top. You will be wanting this every day. It’s quick, it’s delicious and it’s good for you. #winwinwin
(And it holds you for quite a while!) #winwinwinwin

🤩Update: thank you for my MIL for sending me a text saying she’s never heard of FAKE yogurt. 😳 I pulled up my post and sure enough Spell Check changed it from FAGE to FAKE. #thankyounothankyouspellcheck It’s FAGE Greek yogurt! 😋

Yup, no more holiday almond croissants, back to healthy breakfasts! Maine blueberries and no fat Greek yogurt is my usual and tastes so good after too much indulgence. Happy New Year to you and Fred!
