A GREAT Salad is easier than you think!

Are you one who thinks that a good salad is a lot of work? It may be easier than you think. Other than the washing and the chopping – you’re done. No stove to use, no oven heating up the kitchen – just a bowl of deliciousness awaiting you after you assemble and let sit in the fridge to chill for a short time. Sometimes unexpected ingredients are a nice twist…

The best ingredients make for a more delicious salad by far. Use so-so lettuce and you’ll end up with a so-so salad (same with salad dressing!) This lettuce is the best I’ve ever had. It’s Little Leaf Farms Baby Crispy Green Leaf lettuce. It’s a cool place in Mass. where they grow lettuce in the most brilliant of way. I can’t tell you how many times I’ve gone into Whole Foods to pickup lettuce, and I see someone hesitating while looking at the other lettuce varieties. I always let them know that this is the absolute best lettuce I’ve ever tasted. Every time someone will give it a try. #sharingthelove

A good salad has your favorite ingredients within it. This particular salad has the green leaf lettuce, corn cut off the cobb, baby tomatoes, english cucumber, radishes, and pepper jack cheese. Also good would be leftover grilled chicken, black beans, any vegetables you like, maybe a handful or two of baby arugula… the list goes on.

I need to explore making salad dressings because we eat a lot of salad in warmer weather. I’ve read how easy bleu cheese dressing is to make, but I’m also interested in some different vinaigrettes. Trying to keep it healthier. A friend said she has great luck with dressings made with Greek yogurt in place of mayo. So, stay tuned, I’m going to give that a whirl as soon as I use up the Marzetti Simply Bleu Cheese – which is good and without much of the creepy ingredients that you see in many dressings.

    i love salads too . A favorite is arugula with strawberries and candied pecans and either feta or blue cheese . With feta a vinaigrette with orange juice and balsamic vinegar and olive oil .
